Hello everyone!  Well I have been enjoying the new granddaughter and putting up my summer produce.  Everything is going as planned.  I was unable to obtain the Figs I desired for canning this year, so no Fig and Peach Jam for 2016.  Summer is going fast and Fall is approaching .  There are still some fruits and vegetables that may be canned for the winter.  Let's see,...there's Chow-Chow, Pear Jam, Pear Preserves, Pear Butter, Apple Sauce, Apple Butter, Apples with Lemons and Ginger.  OMG!  Just the thought of it all sends my imagination into overload for party planning.  Then there are the Fall vegetables to be planted. Collards, Kale, Broccoli, squash, fall beans, potatoes, and onions.  I can promise that I will find some others.  Well that's all for now but I'll be back very soon with some of my canning recipes.  Until then, Have a Healthy and Happy Lifestyle😚

Grandmama's Edamame

Hello everyone,
Since my last blog I have become a grandmother again.  This makes 3 girls.  Like all grandmama's, I will gloat and say she is Beautiful!  Now on for some real talk.  I would like to give you all some information on a bean called, edame.  Edamame is a soybean that is picked while still being green.  They are eaten raw or boiled with salt in the shell and then eaten.  They remind me boiled peanuts which is a true African tradition practiced the South.  Edamame us packed with nutrients such as, protein, iron, calcium, vitamin K, Folate, Magnesium, Manganese,, Copper and Phosphorus.  Whew!! That's more than a mouthful.  They may look a bit unappealing but, I'm telling you they are delicious.  After all, who doesn't like Pork and Beans?  Well, those beans are dried edame beans soaked in tomato sauce and sugar.  Hmm, who knew?  They are gluten-free and 10 pods=1 serving=29 calories.  There are several recipes for Edamame online but here's an easy one for you.
