I created this wonderful meal after being inspired by a Chicken Soup dish from one of my niece's, being in possession of a whole plump Chicken. Did I say PLUMP? Also craving a taste for something Asian.
I also had a recent purchase of several peppers so being the creative cook that I am, here goes my creativity, hard at work and a hungry stomach.
Ingredients
1/2 Chicken (intact)
1/4 cup Smoked Sesame Oil
1/8 teaspoon Thyme (dried or fresh)
2 Cloves of Garlic (smashed)
4 Slices Ginger (chopped)
1 teaspoon Himalayan Salt
Marinate the above 2-24 hours
Prep ahead if desired
1 Celery Stalk (sliced thinly)
1 Stalk Green Onion (sliced thinly)
1/4 Red Bell Pepper (sliced thinly)
1/2 Serrano Pepper (use up to the seeds) I cut 2 small seeded pieces for a hint of. heat.
10 Green Sweet Grapes (sliced into 3's)
2 slight shakes of crushed Red Pepper Flakes over the completed dish before baking.
Place Chicken in a baking dish. Add marinade sauce in the bag. Begin to dress the dish covering all areas of the chicken with the sliced vegetables. Cover with Foil or the baking dish cover. Cook on 350 Degrees for 45 mins-1 hour. When you smell it you are on the right tract to doneness.
Let rest for 10 minutes before cutting and plating. Enjoy! And as always...
