It is time for Shad and Her Roe. For those newbies to seafood delicacies, Shad is a spring time fish and the roe of the female is delicious also. Here in the south we go fishing for this most delicious fish as one can cost anywhere from $7.50 per lb up to $10.00/lb. Did I mention Shad can weigh 3 to 8 lbs? The other thing about Shad is it is kin to Salmon, Herring, and Mackeral which means it is full of BONES! However, the taste of Shad is worth it all. While most people fry this fish hard to consume it, I learned to process it by canning. This is what they do to Salmon and Mackeral. Hence, salmon patties, croquettes and sauteed with grits on the side. Heck, I am just a country girl and love my cooking. So here is how you bake the roe:
Lady Marisha's Baked Roe
Line an aluminum pie pan with bacon
Slice 1 onion and cover the bacon with it
Sprinkle pepper over the onions
Place 2 pieces of Roe over bacon & onions
Lightly salt and pepper the Roe
Cover Roe with mayonnaise
Cover dish with aluminum foil or glass top
Broil for 20 minutes or until the mayonnaise
turns light tan and the bacon is cooked.
Your house should smell wonderful and now you are in for a great treat!
